Yummy Spring Veggie Pasta Recipe

WOO! It's asparagus season! ... was that too enthusiastic? Sorry. Make your pee smell by making this spring veggie pasta consisting of spaghetti with asparagus, yellow peppers and tomatoes. Feel free to change up the veggies or add meat if you want!

I didn't really measure anything, but just estimated how much to use to make 2 servings. Use your best judgement. 🙂
Ingredients
  • Spaghetti
  • Asparagus - cut into 1" pieces
  • 1 Pepper (I used Yellow)
  • 1 Tomato - cut into chunks
  • 1 clove of garlic
  • 2 tbs milk
  • 2 tbs chicken broth
  • 1 tsp lemon juice
  • 1 tsp basil
  • salt and pepper to taste
  • Parmesan
Instructions
  1. Cook spaghetti as per package directions
  2. In a skillet, cook the asparagus and garlic in a little bit of EVOO, about 1 minute
  3. Add the rest of veggies
  4. Add basil, broth and milk and lemon juice
  5. Cook until liquid is almost evaporated
  6. Add spaghetti and toss
  7. Serve with Parmesan on top
